Butchered and cooked some beef at a friend’s ranch

A friend who owns a deer ranch bought an adjacent cow pasture and is now wanting to learn more about beef - so he and I purchased a black angus hindquarter plus a rib roast, attached ribs with meat, and a tenderloin.  We cooked a tenderloin and all the additional ribs after we separated them from the rib roast.

The hindquarter was cut into a leg section and a pelvis section.

We cut them up into some steaks and roasts.  We’re saving some of the lean roasts for future grinding into sausage.

Tritip

Strips

Belly for "The Cen-Tex Smoker" to make beef bacon.

Ribeyes

Round roasts.

Final yield after cooking and eating some.

Thanks for looking.

  • I am envious. For those who have never butchered, we take what we get at the store for granted with very little understanding of the knowledge and skill required. This would be such a great learning experience.

You run in a circle most of us would love to encounter for just a one-time lap.  Great surgeon skills after knifing on humans all this time.  =) Thanks also for the documentation right there.  Really appreciate the effort.
Regarding the cooks- Uma Thurman nailed it yesterday.

I understand what you did here, but reading just the first paragraph of your post, my sick mind got this image of an empty pasture with a quarter of a cow browsing around, hopping on one leg!
Great pics.  As a kid I watched my grandpa, Dad and uncles kill, bleed, gut, hang, and saw a pig in half once, but that's the closest I've got to butchering.

Agree.  I’m less likely to quibble about beef prices after this experience.

Thanks @lousubcap.   It may have been the best tenderloin ever.  You could cut it with a fork.

I still have a lot of learning to do - especially where the various cuts of beef ribs are concerned.

In the future I’ll try to be more careful so as not to confuse your sick mind.  😀

Thanks for sharing. After butchering a pig myself I could only imagine what it takes to do a cow.

Thanks @saluki2007.  We had originally hoped for a larger gathering and a whole cow, but COVID numbers are rising, so we cut it back to just 2 families.

It was @RyanStl.  I didn't even get a pic of the smashed potatoes that we cooked on the BGE under the beef ribs (after the two lower racks had come off and were in the warmer) - but they were awesome.  Or the tenderloin on the grill.
