    I honestly considered slathering some peach preserves on these,  a la you. If it works for pork, it might work for beef?

    @yukonron those costco ribs are good, but they're GINORMOUS.  i had to cut mine down to size with a hacksaw.

    Yeah, @blind99.  Best prosciutto I’ve ever tasted is one he/we made.

    The brisket attraction for me is the challenge that every cook brings.  No question that a quality dino bone beef rib has every bit of the flavor and texture of a brisket.  As noted above, too easy sometimes.  
    Thus brisket next weekend.  Just because I can.  B)
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    Beef ribs are the shizzle. Stupid easy to cook. I put these on in the morning, ran errands, and stuff until lunch time. No peeking, until the 4+ hr mark. Let 'em ride a little longer... aaaaand done. Can't remember the last time I even cooked, or even hankered, for brisket.

    I have seen the SRF at my HEB baptism a couple of years ago.  Just keep rubbin it in.  Better to be lucky than good.  Now if you could get that product shipped thru their on-line store.

    For sure. They’ve really stepped up their beef game in the last couple of years. 

    This Chopping  Block place is 5mins from work. HEBs,  with their full selection of wagyu stuff, are 10 mins (one of which is on the way home). Starting to feel spoiled.

    Took a few snaps as I ran through my local yesterday. That prime 1 tri tip is no joke either. It’s more marbled than the SRF At half the price.

    Our new neighborhood HEB is much nicer than the old one.  It is still not as good as some of the others I have seen in different parts of town.  I occasionally find some Wagyu there.  Never skirts.  I did grab one of those prime tri-tips last week.  I mostly bought skirts from SRF.  Have done side by sides with SRF skirts and skirts from multiple sources.  Nothing came close until I bought some Chopping Block skirts.  Could not tell any difference between skirts from SRF and Chopping block.  They are building another HEB close by.  Maybe it will be one of the better stores.

    I buy a lot of sirloin flap but my new store does not carry that yet. I have been butterflying the tri tips down to thin strips when i do carne asada. It’s damn good

    We get a lot of good outside skirt up here.  That's one of my most favorite cuts.

    One of our butchers has the most gorgeous tritips in their case.  that may be on the menu friday night - such a great cut to cook.
