@yukonron those costco ribs are good, but they're GINORMOUS. i had to cut mine down to size with a hacksaw.

Beef ribs are the shizzle. Stupid easy to cook. I put these on in the morning, ran errands, and stuff until lunch time. No peeking, until the 4+ hr mark. Let 'em ride a little longer... aaaaand done. The brisket attraction for me is the challenge that every cook brings. No question that a quality dino bone beef rib has every bit of the flavor and texture of a brisket. As noted above, too easy sometimes.
Thus brisket next weekend. Just because I can.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -

I have seen the SRF at my HEB baptism a couple of years ago. Just keep rubbin it in. Better to be lucky than good. We get a lot of good outside skirt up here. That's one of my most favorite cuts.
