Brisket- Cumming GA

22lb from Costco. Rocco waited for a bit of fat to hit the floor. This was a beast and things are looking, well, pretty good. I watched a video about making tallow off of the trimmings, which i think i have a good 5lbs of and i'm gonna give that a shot. Post oak and cherry, and i think we all can see the beautiful cherry influence. Into the stall at 157 and i'll let the bbq guru handle it from here.

    Nice looking cook. I haven't cooked a brisket since the pandemic started. My Costco membership lapsed and I was cut off from my source. I have recently renewed my membership, now if beef prices could return to pre-pandemic levels I would be all set.
    Was your brisket one of the prime grades they sell?

    Yep, and the 2 Costcos near me only sell prime.  I recommend wet aging it 45 days then either cook it or freeze it.  Just turn it every week or so in the fridge and let the enzymes do their magic.  New for this cook is making beef tallow.  Got all the fat from it simmering in a pot on the stove.  We'll see how that goes!

    I think the beast was 2.79.  Love paying over $1 more per gallon of gas when compared to 1 year ago too. Great administration we got going, and I can say 100% that it certainly ain't my fault.

    And I always get a kick out of the supposed free market guys who cry when commodities surge and fall during times of shortage and excess. And here I thought a government who held commodity costs in checks was…eeeeeek! SoCiaLiSm😮😮😮😮😮😮

    Well, we were able to drill on federal lands and exported more than we imported. Not true today, but each administration has its plusses and minuses as I've learned. No offense meant.

    I don't think me or @litwere crying. Just commented on the current price vs. the one I paid which was $2.79lb. Yes, prices go up and down.

    There was a severe shortage last winter and meat prices never got near this high. Whats the difference? Ribs in costco went from $2.29 a lb to $5.69 right now. This is caused by inflation from all the money the government is pumping into households. Atleast 6 more months of it now with these free child tax credits.

    We can afford it just choose not to. I’m pretty sure this isn’t from a shortage since costco had like 40 prime briskets out yesterday and not 1 person even looking at them.

    You arent even smart enough to figure out all this free money caused everything in the article you posted. And you post you run a 5k almost every day like it is some super workout when you could just say I jog 20 minutes a day. You also could have said I warm up almost every day with no real workout thats probably the best description.

    A select grade I bought at Kroger was one of my best so I'd say you're good to go with choice. Only thing I'd recommend is salting/seasoning a day or 2 before cooking uncovered or covered in the fridge to let the salt do its magic and keep 'er moist.
