Starts out with a couple fine diced onions, minced garlic, 3 sticks of butter sauteed in a big pot. Add fine ground Boston butt, a couple pieces of smoked chicken and a few pieces of crispy fried livermush added to the pot. simmer for a while. big can of tomato sauce and tomato puree. add garlic salt, salt, coarse ground pepper, cayenne pepper, Worcestershire sauce, a little apple cider vinegar Then cook it to death on low heat. We just adjust the above to our liking.
Wards BBQ in Sumter SC is where this came from and we have been trying to make like theirs for a couple years. Its good stuff with steamed rice, pulled pork and slaw and quiet dogs. Give it a try. Its hard to mess up.I drink cheap beer so I can afford good bourbon.

Thanks @bubbajack. Just went down another rabbit hole with livermush. Going back to my PA Dutch origins with that, reminds me a bit of the scrapple I grew up with. Might have to substitute that for the livermush.Ubi panis, ibi patria.
