Let's Talk Donuts!

How do you feel about homemade donuts? My only experience was with using canned biscuits as a child. The cookie thread inspired me to try a homemade yeast donuts. These were ready from start to finish in ~3.5 hours

Come get fat with me.

It's a pretty wet and sticky dough



After a 2 hour proof in the oven


Back in for a 30 minute rise



Final Result


Overall I'm pretty happy with the first go. The twist donut was made from the scraps and ultimately failed during the fry. Anyone have a "go to" yeast donut recipe?

    I have thought about making donuts, but I always knew that if I made a dozen, I would eat a dozen! And it seems impractical to make just one. Ya know? So far, I have resisted.

    Yours look really good though. 

    I hate it when I go to the kitchen for food and all I find are ingredients!

    None of us kids were allowed to do donuts at home, so we usually did them in the parking lot at school....until the janitor would shake his fist and run us off.

    I love me some donuts (insert pig joke) and yours look amazing. 

    Foghorn probably knows of this, but there's a place called the "Pig Stand" in San Antonio (where I spent my last 3 years of HS) that sells donuts and coffee.  I lived near it when I moved out of the house. 

    We used to find it mildly humorous that there would usually be one of more SAPD cruisers parked in their lot.

    Thinking back...I'm not sure I ever ate there so I can't be sure they sold donuts.  If that stereotype breaks because of that I'll probably need therapy.

    None of us kids were allowed to do donuts at home, so we usually did them in the parking lot at school....until the janitor would shake his fist and run us off.
    Some of us did graffiti, set off firecrackers, or consumed substances in the school parking lot. Others trained to become pastry chefs.

    It's funny John but I've been thinking about doing this myself too.  The youngest loves pumpkin donuts, and I think I might have to track down a recipe and give it a shot.   The oldest is into maple frosted.  
    John....you be careful as you may be ridiculed for eating pumpkin. Its good chit though.  ;)

  • Growing up we would make home made doughnuts in the deep fryer after a Halibut fry.  I think we seasoned with sugar and cinnamon. Brings back memories thanks @ColtsFan

    Aight, here it goes. This came from a recipe box that I had stashed away in the cabinet.

    Ingredients:
    1.25 cups of milk
    7 grams instant yeast ( or 1 package)
    2 eggs
    1 stick of butter melted
    1/4 cup white sugar
    1 tsp kosher salt
    4.25 cups APF

    Add yeast to warmed milk and let bloom (5 minutes) I added a bit of the sugar to help it along
    Beat eggs, butter, sugar, salt (I used stand mixer with the paddle)
    Add yeast milk mixture and half the flour and mix (Still had paddle on)
    Once mixed well, switch to dough hook and add rest of flour
    I let it knead for 5 minutes (If it's too wet and a couple Tbl of flour)
    Pulled away nicely from the bowl
    Proof until doubled in size (Our oven has a proof function. Took about an hour)
    Roll it out to 1/2" and cut. (You can get by with re-rolling the scraps once)
    Put on sheet tray lined with parchment or well floured and let rest for another hour.
    Heat oil to 375*
    Carefully fry a few at a time to not overcrowd the pot/fryer/pan 
    These fried about a minute each side (they were very delicate. I had to use a bench knife to handle them off the cookie sheet)
    Drain on racks and cools 15 minutes before glazing

    Glaze was simply powdered sugar, vanilla and milk. Added cocoa for the chocolate variety.

    Lots of pizza joints use benchtop sheeters. Some about the size of a big KitchenAid Mixer
