Havent posted in a while - Monterey Chicken Dinner with Volcano Rice-

Havent posted in a long while but wanted to back in the fold..
I followed Malcolm's Monterey Chicken recipe for this one. Used different seasoning and sauce but followed the method. Turned out great! We will be making this again.

I made that up on the fly. We made white rice and I wanted to shape it on the plate so I thought a cone shape or volcano would be cool. I seasoned up the rice with Flat Iron Pepper Company's Dark and Stormy.. I then made some salsa and and topped it off. After that, I just decided the pan juices were too good to waste so poured it over as well.. Lol

Your cook inspired me. I watched his video and then looked in my cupboards and fridge.
I had to make the following modifications:
1. Boneless / Skinless Chicken Thighs
2. Meat Church Holy Gospel Rub
3. Sweet Baby Rays - Sweet and Hot
4. Smoked Gouda
5. Purple Onion
It was fantastic! I will be adding this to my regular rotation.
