OT - Keema Bao

I’ve had bao (steamed Chinese buns) on the brain for a couple of days now. Plenty of places to get different kinds of bao in these parts, but I felt like making my own... with a slight twist.


Started by making keema (minced goat/chix/beef... whatever strikes your fancy). Made the bao dough and filled with said keema. The dough calls for some cornstarch, which makes the dough silky and elastic.

Steamed in a bamboo steamer on the stove.

Will have one for lunch shortly. The quality control sample tasted pretty good

Basically like a meat pie, and the filling to dough ratio worked out well. All I know is if Ashish is making it then it will be tasty.Chinese folks have settled in Kolkata (India) since the 18th century or earlier. One area in the city with a significant Chinese community is around a place called Poddar Court. When I was growing up in Kolkata, my sisters would take me there for the early morning street market, for dim sum and all kinds of goodies. You had to get there early, because the street market practically vanished by 8am. Delicious, fresh food. Took caliqueen there when I was courting her as well.
