OT - Keema Bao

I’ve had bao (steamed Chinese buns) on the brain for a couple of days now. Plenty of places to get different kinds of bao in these parts, but I felt like making my own... with a slight twist. 

Started by making keema (minced goat/chix/beef... whatever strikes your fancy). Made the bao dough and filled with said keema. The dough calls for some cornstarch, which makes the dough silky and elastic. 


Steamed in a bamboo steamer on the stove. 

Will have one for lunch shortly. The quality control sample tasted pretty good :)

     My friend, I generally pull a dictionary off the shelf before I begin reading one of your posts. It's always worth the effort though. I generally learn something and get hungry at the same time.

    Basically like a meat pie, and the filling to dough ratio worked out well. I made some with  boiled egg, cheese, and five spice powder for quick breakfast during the week.

    No studio, just dim kitchen lighting since I do a lot of cooking/baking at night after the fam is asleep. And some post production tinkering with the iPhone photo app.

    What did you think of it? I've made pulled pork bao before,  sort of a riff on char siu bao.

    Not at all :) It's in regular rotation here. My mom made it regularly. The recipe is in my head, but I can jot it down if you like. It's pretty simple to make.

    Goat Keema is my favorite, but any minced meat works... chix, turkey , pork, veal, beef.

    My bad. @canugghead was likely the only one to get the Poddar Court reference. 

    Chinese folks have settled in Kolkata (India) since the 18th century or earlier. One area in the city with a significant Chinese community is around a place called Poddar Court. When I was growing up in Kolkata, my sisters would take me there for the early morning street market,  for dim sum and all kinds of goodies. You had to get there early, because the street market practically vanished by 8am. Delicious, fresh food. Took caliqueen there when I was courting her as well. I have many fond memories of that place.

    Nice.  Making buns is certainly in your proverbial wheel house. 

    I got the dim sum wild hair earlier this year and did some research and bought a boat load of various flours.   This motivates me.
