Road Trip to Cook at 2019 EGGtoberfest!

Shelly and I will be cooking this year at the 2019 EGGtoberfest.
Our Big Green Egg distributor here in Texas, Paragon Distributing, asked us if we would like cook at EGGtoberfest!
Of course Shelly and I both jumped on the opportunity to cook!!
Our menu will be 3 of our favorites.
First up is "Scottie's Balls". Our Texas spin on @SGH 's "The Best Appetizer That You Will Ever Eat"
Next is our "SuckleBusters 1836 Beef Sliders". These little guys pack a lot of Beef flavor!!
And we finish with our "Baja Wave Tequila Lime Pulled Pork Tacos".
I'm told we will be in the BIG Green Egg Corporate area under the white BGE special pop ups like we have at Athens TX EggFest.

Have fun!!Using pretzel sticks as cocktails sticks is a slick idea. Edible so no waste to dispose of. (Ingredients per 1 Lb of ground chuck. Nets 10 patties per Lb)
1 LB of 80/20 ground Chuck (Fresh store ground works best)
2.5 - Tbsp SuckleBusters 1836 Beef Rub
1 Bottle of SuckleBusters Original BBQ Sauce
Hawaiian Rolls
Valasic Ovals
Instructions:
1. Completely combine the ground chuck and SuckleBusters 1836 Rub in a large S/S bowl.
2. Do not work too much! Keep it loose.
3. Cover with foil and let rest in the refrigerator over night (Do Not Skip This!!)
4. Measure out 1.5 oz. portions and loosely make into a patty.
5. Prepare your Big Green Egg for cooking indirect and bring the temperature up to 350 degrees.
6. Place the 1836 Beef patties on a perforated pizza pan and cook until you reach an internal temperature of 148 degrees.7. Slice the Hawaiian Rolls in half, sauce the roll with SuckleBusters Original BBQ sauce and add one dill pickle slice.

They ask the best.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

Shelly and I had a great time. Drove out 6:00 am Wednesday morning and we were back home Sunday night at 6:00 pm. 1,836 miles!
Including the flat we had on I20 coming home. A big thanks to the young man at the TA Meridian Truck Center. I got the warning light as I was approaching the exit. Pulled off and there was the TA Center. Rolled up the the air machine, got out and as I looked at the right front the the last of the air was gone! 20 minutes later we were back on the road headed home. We were truly blessed!!
Friday morning as we were walking out the front door of the Marriott Evergreen Resort, I looked to my right and there in one of the rocking chairs sat Ed Fisher. I told Shelly to wait a minute. I walked over and introduced Shelly and I. We talked a bit and I had mentioned to him that his decision to create Big Green Egg has really been a life changing experience for us, Not from a cooking aspect but from all of the dozens and dozens of amazing friends we now have and the hundreds of other EggHeads we have met from all over the world. He was very kind to give us his time and talk with us. This trip gives me a whole nother perspective on BGE.
From our time visiting BGE HQs, the Friday morning EggtoberFest site inspect, Friday setup, Friday evening meet and greet at the Evergreen Resort, 6:00 am Saturday morning load in, all though the 2019 EggtoberFest event, Saturday afternoon setup take down and load, out everyone we encountered was very nice, incredibly supportive, accommodating, helpful and knowledgeable on helping us put on our first ever and very successful Eggtoberfest. These guys and gals are the best! Bruce, Bob, Joe, Liz, Lou, Paul, and dozens of others along with the amazing BGE volunteers.
Our location was right next to the BGE Retail Store tent. We had great some great neighbors beside us. Two other BGE distributors. Sierra Select I think and one from the North West. Nice bunch to share the day with!
We served over 900 including Eric. He was the Police Officer who was posted just behind the XLBGE and the two LBGE's I was cooking on, keeping watch in the BGE retail tent at the exit. The tent had most of the sides rolled up so I keep him fed and watered all day! Again a nice guy!!
We met a lot of other BGE cooks and BGE cook teams from both near and far. We did not get time to walk around an experience the full EggtoberFest so we will likely return in the future to do so. I will post what pics I did manage to get before, during and after a bit later today hopefully.
A big thanks from Shelly and I to everyone at BGE, Paragon Distributing and all of the volunteers and the Support staff at the 2019 BGE EggtoberFest!
