twin butts on for 18 hours now and still at 170IT man this pig is stubborn

I put the 2x  8.5lb butts on last night at 10:00 pm and the egg has been rock solid at 225 raised indirect with drip pan naked for 18 hours now. Its time to bump up the temp and push these bad boys through. I actually forgot they were on its been so long

    @225 they take their sweet time, i prefer what you are doing then if I need to push it through I will

    It was "time to bump up the temp" when you started the cook. 225° buys you nothing. Try 325° next time... start at 9-10AM, done by dinner time. Just as good.

    I hate it when I go to the kitchen for food and all I find are ingredients!

  • I'd wrap and bump up the temp to 300-325,you already got all you smoke and a good bark.

    Smoke butts at 250-300. No downside and done faster. Also eliminates these L&S dilemmas. Or go Turbo at 325+.

    I know about turbo and 90% of the butts I do are turbo but figured I give this a go. So here is the outcome;

    25.5 hours later great bark and still juicy and I taste no difference then when I do turbo so the lesson learned for me is no more L&S butts.

    Also I did one bone in and one boneless again I can't tase the difference so I'm indifferent on that option









    I vacuumed sealed the butts and they will get a warm water bath sat night for tacos while were camping. They will be enjoyed.

    I also personally find 225 to be too low. I usually do 260-270. Did an 11 lb butt in 11 hours last weekend. At 225 they were taking up to 16 hours .....

    i prefer the 225 to 235 range mostly because im not driving the boat back to the egg at 9 in the morning to light and start a cook  and then head back out. its just too convenient for me to slow the cook way down
