I'm having trouble getting my temp to 225-250. It's staying around 275. I have the vents closed as much as possible with out putting the fire out. Any suggestions? Or am I ok with 275?

275° isn't just fine, it's BETTER, in my experience, than 225°. If you have an offset smoker, maybe a lower temp would be better, but in a Big Green Egg, I get better smoke, more smoke, and much more stable temps at 250° or above. I think it's a mistake to cook lower than 250° on a BGE. My normal low-and-slow temp is 250°-275°.
