About to start preparing spares. I have 9 racks of spares and 6-8 4 bone racks of "beef chuck riblets".... They look like all bone. We'll see...

Alder-smoked salmon, button mushrooms fried in butter, and white rice with Japanese-Crack Soy Sauce (JCSS?).
I ran out of alder planks so used chips, I prefer the CI grates flat-side up and since the salmon still had the skin on, no problem with sticking. Went Minimalist, just salt and pepper.
No pics, but damn this was good. I need to cook more fish.“I'll have what she's having."

Finally got my BGE moved from our old house to the new house today. Been a month since we moved and it was a whirlwind ordeal, we weren’t even house hunting but stumbled on a place and closed escrow in less than a month from our offer being accepted.
Having my egg back makes the new place feel more like home.

Just had a great 3 mile hike in the NC mountains. The point of joy came as we look out over the Linville Gouge. I might add that BBQ aside, the North Carolina mountains are Gawjus. A slice of heaven I think. Oh to be a hawk and fly these sky’s.

While in the mountains, I changed the gasket on his medium egg. I had purchased fro @RRP a while back.
I cleaned it up (no pictures) and applied the Rutland (following the directions to the letter), and left it to cure. Still need to do his medium down in Charlotte....a task for another day.Ellijay GA with a Medium & MiniMax
