After a 2 week break, we got back to work yesterday. First we had to let the new Dexters into their field. As promised in another post, here is a picture of the new calf. You can see how small they are. Calves are 25-30 lbs. note how he come to the knee of my friend. To the left is the mother- notice the short shoulder height of the mature mother. A smaller heritage breed which has great flavor.
Then we got to work. The meat rail got painted and then put up one panel. By the time we were done, it was time for some filets and burgers we got from the farmer we bought the dexters from. Cooked on the minimax
We finished the right wall, and got done with 3/4 of the left. Had a hard 5 pm cutoff, so that is where we are.

Major progress was made today.
First was a visit to the goats. The ladies are ready to breed again:
So we rented this buck from the neighbor. His name is “Harvey”.
And it did not take long for them to get friendly. Good for them!
Then we got to work and we finished the paneling:
And we got the cooling system online :
After a bit of it work to get the thing online, it worked like a charm. It has web app that will monitor the temp and send alerts, both by email and text. We set everything up and everything worked flawlessly. Just have to do a bit of cord management
Then we brought the meat rail in and were wondering how we were going to get this thing mounted with just the two of us.
Then things fell in place. The mailman came and so did the UPS guy at the same time. They saw the room and we asked if they would help and they were more than happy to. Not even 3 minutes later it was held up well enough for us to get get the rest of the bolts in. Done:
So next is to finish the plumbing, caulk where needed, and wash the walls. Then the expensive part - accessorize the room. Feel free to throw out ideas. The one thing we know we are going to do is put anything heavy on castors so it can be rolled out or easily moved around in the room. Go ahead, spend my money, you guys are champions at that. What would you get and what would you put in it? I would like to hear your ideas!

@johnmitchell Yes. While nearly everything we have done is custom made for and by us, the lights are obviously off the shelf and the door was fabricated by a cooler company to our specifications. There is an emergency latch release that you can push and it will open the door. It even glows in the dark so if there is a power outage, you can still find it. This room goes to zero light with the door closed and lights off. I mean 100% black - other than that release.
