  • My kind  of  thread, we cut up 3 market  weight pigs 2 weeks ago. I finished slicing all the bacon this last Wednesday  night, all 54 lbs of  it.
    I missed out on a 12 month old heifer  2 weeks before that, that had fell and broke a leg cause I  boggled  for half hour on logistics  and another buddy got it.

    Fantastic project!

    One word of advice, don't cheat yourself on lighting (though, with the work so far, it looks very unlikely that you would).

    Second word of advice, if you are going to hang stuff, you may need pretty large scale humidity control for the volume of air you have (unless you are just using a fridge).

    @SGH whenever possible, we try to kill the animal without having to transport it live, although that Has not always worked out to this point. So we will kill in the field/nearby if possible and then go from there. We do have a slaughterhouse 10 mins away which we can take the blood and guts to after disembowelment for just a couple of bucks which is really nice. So, this room is going to be for hanging/holding the animal(s) until butchering and then butching as well. 
    And anything else you want to hold and keep cold.

    Have you planned on insulating the ceiling of the freezer section and wrapping surfaces in metal? That room above could get quite cold.

    @20stone lighting is currently the big decision we need to make at this point. We know we want a low profile to flush mount LED lighting that is also indoor/outdoor rated.  The biggest variable is how many and positioning. It is tough to gauge the lumens and spread without the final walls up because there will be reflection off the product we chose.
    Humidity control: considere and discussed but no final decisions yet. We have to see where things end up after we see what airflow, air exchange and natural humidity is before final sizing is decided upon.

    But great points to bring up!!

    The whole room is going to be insulated as well as we can can get it. The good thing about the room above it is that it is a uninsulated 3 season porch. We do not want to be cooling it in the summer. We should have significant and sufficient insulation up there at then end of this.
