My kind of thread, we cut up 3 market weight pigs 2 weeks ago. I finished slicing all the bacon this last Wednesday night, all 54 lbs of it.
I missed out on a 12 month old heifer 2 weeks before that, that had fell and broke a leg cause I boggled for half hour on logistics and another buddy got it. -

Simply a great addition my friend. Question if I may. Are you going to use the room as a mini abattoir as well? If so, that’s even more awesome my friend.

Fantastic project!
One word of advice, don't cheat yourself on lighting (though, with the work so far, it looks very unlikely that you would).
Second word of advice, if you are going to hang stuff, you may need pretty large scale humidity control for the volume of air you have (unless you are just using a fridge).
Again, awesome project(now only 16 stone)

First it was a fridge. Then I said we should have a meat hanging rack. So we added that. Then we said we will need some tunes in there, so we just decided yesterday we are going to have speakers.... When the labor is “free” (because we like what we are doing), the materials cost is not bad.
So far.... it is still a bit early in the build.

Thank you for all the comments and support everyone. This is a really fun project.
To give you a better picture of what is going on and the layout, this is the view looking from the driveway to the house. You can see there is plenty of room to wheel something right up to the door.
Getting closer..
Door open
Last night we got the door tacked in place so we can start the framing of the front wall.
From the inside looking out:
Once we get the framing totally in place, we have to remove the door, remove the wood you can see on the bottom of the door so the rubber sweep sits right on the concrete. Hopefully the framing will be done Wednesday.--------------------------------------------------

Have you planned on insulating the ceiling of the freezer section and wrapping surfaces in metal? That room above could get quite cold.Ubi panis, ibi patria.

Humidity control: considere and discussed but no final decisions yet. We have to see where things end up after we see what airflow, air exchange and natural humidity is before final sizing is decided upon.
But great points to bring up!!--------------------------------------------------

When you go to sell your house, how to you market an indoor meat processing and storage facility?
