Both of those links show a double-string chainstitch which is what we use. You have to cut the string on the left side of the back of the bag. Then pull out the string on the back, then the one on the front that's threaded through the bag.
The sewing machine is pneumatic and the bag rides on a conveyor belt. You adjust the height, then it trims the top of the bag, applies the closing tape, then sews it shut with the two strings. It's a workhouse of a machine.
A lot of the other videos out there are single string lockstitch which is a little different. These are usually the same type of stitches you see on seed and feed bags since they use a hand held electric sewing machine.

AHA! Thanks @stlcharcoal, I thought it was just random why sometimes the strings just pulled easily and other times I was snarling by the end of it. Cut the back left side then pull, correct?
