Christmas meals so far...

Options
Christmas Eve, sous vide lamb (seared on the poolside gasser), green beans (blanched, sautéed in duck fat and coppa on top) and wild rice cooked in homemade beef stock)


This morning, chilaquilles, with confit chicken, queso fresco, creme fraiche, and sunny side up eggs (fried in duck fat)


Baguettes in process for lunch.  To be continued.....

    I bought about the right amount.  Just like a good dirty hippie, I recycle it. The turkey turned out so well, we repeated it with chicken today, and have since scavenged the fat again for the NEXT thing.

    And there's no such thing as too much duck fat. One of the things that saddened me about moving from Iowa, was giving up my collection of animal fat... tallow, schmaltz, duck fat, and more. Lack of both planning and dedication back then.

    The recipe I followed (https://www.theperfectloaf.com/sourdough-baguettes/) anticipated a 40+ minute bake, and mine were done and darker than I wanted 25 minutes in.  Further, the crust was tasty and crunchy, but didn’t have the thickness I was looking for. 

    I used a spray bottle to get moisture for steam, but it wasn’t enough. 

    Tomorrow,  the survivors are going down with French onion soup that @20stonespice has been making over the last few days (starting w roasting beef bones and carmelizing onions veeeeery low (over 5 hours)).

    Only pic of the meal. Fennel pear salad with pomegranate dressing. Prime rib, Yorkshire puddings, Brussel sprouts, roasted heirloom carrots and parsnips. Bourbon bread pudding. 12 adults 5 kids.

    @GrillSgt, as a great looking chunk of beef, right there.  I hope to do so well with my more humble cut frm a fancy steer tomorrow. 

    @GoooDawgs, a Wellington is a beautiful thing, and that’s exceptional work on the decoration. I’d love to see a pic of a slice.

    Nice food!  We did tenderloin, a delicious apple fennel salad, Brussels, and kenjis duck fat roasted potatoes which are so ridiculously good. Bread was as good as I can make: two loaves, one in the banneton (cooked in CI DO) and the other proofed just on a silpat and cooked under a bowl. Baguettes, man, let us know how it goes. My baguette shaping is poor. It is hard!!

    “PAC pie” (pear, apple, cranberry, recipe from Hoosier Mama’s in Chicago). Sooooo friggin good. 


    @20stonespice French onion soup (store bought cheese, beef stock from bones, a mountain of onions reduced veeeery slowly, sourdough baguette), served with a sip of Angels Envy Bourbon.


    Arugula salad w blue cheese, pistachio, tarragon, blueberries and radish. 

    Wagyu bottom round SV and seared w roasted root veggies, a Sonoma cab and grated horseradish. 


    Eggnog spiced panna cotta with a drunken cherry (Amaro Nonino and Willet rye), served w a sidecar of Don Q grand anejo rum and crispy thin ginger cookies. 


    A lot of this looks/sounds pretty over the top, but this was all very straightforward. The French onion soup took the most time, the baguettes took the most practice and the panna cotta took the most delicate touch. The tricky stuff (except for the baguettes) got done by @20stonespice, so it’s been a pretty easy cruise for me. 

    Chilaquilles for breakfast again tomorrow, and I’ll be back on the plan as soon as I finish eating the pie.

    This was the appetizer for Christmas Eve. Pork belly smoked day before on the egg. Cubed and seared in CI in the wood fired oven. Served with some South African peach chutney a friend gave me and some pickled green cabbage. Will definitely be making again!
