Ground up 2 prime Meyer All Natural briskets for burgers today. 28.11 lbs of brisket yielded exactly 13lbs of trimmed ground. Lots of hard fat on these!
Smoked indirect over Oak at 225 until 132 internal then replaced my oval stone with the lodge griddle (perfect fit for Large Adjustable Rig).Got it ripping hot and seared 45 seconds a side. Burgers were 6.5 oz and delish. Smoky, crispy, little pink in the middle. Fun little project and I have 11 lbs of ground left







No finished pics but the burgers were great. Served with Tots (of course)Keepin' It Weird in The ATX FBTX -

Yes. On winter nights that I'm too tired to cook, I'll eat the Cream of Chicken soup, and it ain't bad (warning, it boils over very easily).
