Uses for pork butt besides pulled pork?

I picked up some boneless pork butts this weekend at Costco.  Usually I can use some butchers twine and get a decent enough shape out of them, but 1 of the 2 was in at least 5 pieces and will just not stay together no matter what I do.

I figure I could grind it and mix it with some chuck roast for meatloaf, but is there anything else you'd do with a pork butt that can't stay together?

Thanks everyone,

In cooking, often we implement steps for which we have no explanations other than ‘that’s what everybody else does’ or ‘that’s what I have been told.’  Dare to think for yourself.

An often made as it is often requested use:
    KERI’S HOG-APPLE BAKED BEANS

Microwave 8 pieces of bacon, save grease, dice 4 of them for this dish

2  28 oz  cans of Bush’s Original Baked Beans – do not drain

½ c Blue’s Hog Sauce or your favorite BBQ sauce

3.0 cups of pulled pork chopped fairly fine

1 21oz can of apple or cherry pie filling – dice so no large chunks

    1 med onion, chopped

    ½ green pepper, chopped

    ¼ c brown sugar

    2 T Worcestershire

    2 T yellow mustard

½ t chipotle or cayenne pepper

1 t Blue’s Hog dry rub or your favorite dry rub

Sauté onion and green pepper in the bacon grease. Mix all the remaining ingredients in a cast iron Dutch Oven stirring thoroughly. Bake in BGE indirect at 325° dome using plate setter with legs up and some spacers for air flow for 1 hour with NO lid on the DO.

Another vote for sausage. A grinder works of course, but so does a food processor if you don't have a grinder.

I hate it when I go to the kitchen for food and all I find are ingredients!

Rotisserie followed by thick slices is one way. Thick slices followed by grilling rocks too.

Cube it up and do pork butt burnt ends

Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

Not a dumb question! Just a dumb cut and paste post by me! It should have read 8 pieces for a full recipe or 4 for a half reciepe!

Probably pretty pedestrian fare but we like to make burritos...with flour tortillas, pepper jack, pulled pork, black rice, spicy refried beans, and condiments such as pickled onion, and guac, lettuce, etc..

    YMMV

I make a dish of tater tots, piled with pulled pork shredded cheese, diced smoked garlic, chopped roasted onion, and your favorite BBQ sauce....messy, but delicious.

thanks for the tips everyone.  I'll go with the burnt ends.   Usually I take the butt off at 170 to cube up, so I assume if the butt is already destroyed just cube it up raw and cook it like normal burnt ends?
