I used egg plant as a pasta replacement this past week. Worked very well. Didn't miss the pasta.Richmond and Mathews County, VA. Large BGE, Weber gas, little Weber charcoal. Vintage ManGrates. Little reddish portable kamado that shall remain nameless here. Very Extremely Stable Genius.

1 1/2 cup mozzerella
2 tbsp cream cheese
1 tsp white wine vinegar
1/2 tsp salt
melt mozzarella and cream cheese. (60-90 seconds in microwave). Stir in the rest of the ingredients. Put down some parchment paper on both sides and smash with hands to get it where you want it. Another avocado and jalapeño pimento cheese night for me- it’s easy and pretty tasty.
I’ve got to say I really feel a lot better and for the most part haven’t had a lot of cravings. 8 lbs from initial goal but think I’m going to crank it up a little.
I got stuck on a plateau and dropped the bulletproof coffee and sous vide egg bite breakfast.
Traveling every week week till mid December- complicates things a bit.
What do you all do on the road?

Just spent 5 days in Taos with LawnRanger (and wives). Dropped 3.5 down 36 now. Mike has hit his goal and eating like a mad man but holding. Mike brought pork belly. I love fried pork belly and eggs for breakfast.
Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd. -
Good tip for cutting cauliflower from one of my favorite TV cooking personalities....
