Pro tip - forgive me if you know it already. Take some 60 grit sandpaper and sand the bottom. You won't get rid of the valleys, but you'll get rid of the peaks. Re-season and you've improved your new pan drastically.

You would be correct if you’re wanting a frying pan but the peaks and valleys are great for the pizza crust.

How so? My 12" is sanded down - i use it for many things though. I used it twice now for Focker's pizza and the pan didn't even need water to clean - just a wipe.

Don’t get me wrong. I have CI pans that are as smooth as most peoples nonsticks, but I believe the roughness gives a more rustica crust. Or maybe not.

Yep. Medium is 15 3/4. Lodge is about 14 1/2 with handles. My lodge has a cut off handle which is why I say about.Phoenix -

If the crust is too thick in a 10" pan, why don't use just use 2/3 or 3/4 of the dough instead of the whole thing? You can freeze the excess and before you know it, you'll have enough for another pizza.Judy in San Diego -

I'm lazy and buy naan bread or pitas to make pizza... then everyone can top their own.

Gonna try this but had a question regarding the best egg setup for this. I have a CGS AR arriving Friday as well as a new Lodge CI pan, should I just use the standard plate setter with the grill grate at normal level for CI pan pizza or would raising it up a bit using my other new AR toy be better? I was planning on using a traditional pizza stone setup for pizza using my new AR combo but after seeing this thread I added a CI pan to my amazon order this morning.
