Prep is key in anything, the test is easy.. Prime Tri Tip, Chiken Thighs ( my Confit version) Rice Pilaf .Meaured out all the rice , vermicelli , stick and butter for the pilaf a day ahead ...started fire 3 hours before cook for a good bed of coals...assembly line on the chicken,and tri tip, total cook to loaded for delivery 3 hours...yes our Tri Tip is done more like a Brisket, not Med...try it some time, thanks for looking , enjoy your day
