Cook for 100 Happy Fathers Day Pic Heavy
Prep is key in anything, the test is easy.. Prime Tri Tip, Chiken Thighs ( my Confit version) Rice Pilaf .Meaured out all the rice , vermicelli , stick and butter for the pilaf a day ahead ...started fire 3 hours before cook for a good bed of coals...assembly line on the chicken,and tri tip, total cook to loaded for delivery 3 hours...yes our Tri Tip is done more like a Brisket, not Med...try it some time, thanks for looking , enjoy your day

@JohnInCarolina it was for a small wedding , cooked, delivered served 4 hours on site from arrival to departure ......word of mouth only, don't need the work and will only do it if it's fun..sometimes I take my trailer to,the site, I did all this at home which made it nice....for those that want a fail proof excellent and easy chicken this never fails ...about 25 thighs per pan, your favorite Chechen rub, I tend to go a bit sweet savory...cover tight in foil. I do these in my warming oven 225 to 250 for 3 hours, the cook in their rendered fat and juices ( my fake confit) after that time I pull , double layer the chicken for ease of serving...youll be a hero with thisVisalia, Ca @lkapigian
