It’s official. We have a problem

Made pizza in the Roccbox tonight. Always fun. That’s not the problem. The problem really isn’t a problem but more of “wow, we are in deep” kind of thing (in a good way). 

This dough was made from hierloom grains that we milled and added to our starter. We grew the tomato, basil, made the pesto from the garden and...wait for it...TFJ made the cheese too. Creamy style feta and it was out of this world. The only thing we didn’t make or grow were the wheat berries we bought to mill for the flour. The fresh flavors were incredible. 

i guess this is my way of announcing we are getting in to making cheese now. It’s gotten weird and I like it. Couple of mods to the new cheese cave fridge and we will start aging. Hopefully next week.

    Cheese is always first. If it ends up saving my life when da gubment comes for me then so be it.

    They have Einkorn and we have milled that for bread. This was “Rouge de Bordeaux”

    You can make some nice unaged cheeses in your regular fridge. This feta was killer. First try too. She’s a wizard

    Ha ha. BlendTec wildside jar but there is a more expensive way...(blender works like a champ).

    So...you didn't actually mill the grain to flour, you chopped it...

    I'm lazy as hell and made mozerella -  slackers!!  Seriously though, bought a kit from a home brew store and a gallon of whole milk.  So good. I looked into other cheeses and it's a steep slope from there.  Never did it again.

    I am so lazy, I buy artisan cheese at the farmers market, and wine, oh and bread. Almost forgot, vegetables, um, and eggs, pork, lamb and beef. Herbs too.
    I am as lazy as it gets. 

    I am impressed with anyone that makes cheese, sausage and other things. Grinding or chopping your own wheat, whole new level for me. 

    It looks absolutely righteous my friend. Thank you for sharing.

    Ha ha- grinding wheat was by far the easiest part. Put in blender, spin it.
