So when making brisket chili I’m assuming you don’t add too many spices to the base. Is it mostly just onion tomato paste or sauce and then a little chili powder and cumin?

I did similar with pulled pork awhile back. PP was to mushy IMO. If I were to make PP enchiladas again I would cook less and chop it.
The brisket was much better but would still be better with slightly less cooked flat or even a dryer flat.
Was not really a planned a cook so just used a cheap store bought shredded cheese and 2 cans of enchilada sauce. 1 can reduced with the onion, garlic and tomatoes and 1 can split over the 2 trays of enchiladas.

The sauce I mixed into the brisket was Light EVOO, onions, garlic and fresh diced tomato that I added a can of enchilada sauce and reduced. Folded this into the brisket and tried not to mush up the brisket along with a sprinkle of Penzey's Bold Taco Seasoning. Added another 1/2 can of enchilada sauce over each tray of wrapped enchiladas.
