@AlbertaEgger somehow I think Rockwood and Maple Leaf must use a similar sewing machine (or whatever it is called) to seal their bags. The two bags of Rockwood I have been able to get opened just like as described, and that’s how Maple leaf opens.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad! -
@GATraveller - There are different methods/machines for stitching bags like that, so the same method doesn't work on all bags.

Mac 'n' Cheese
Pasta (ridged elbows, 1 box) 12oz
Butter/lard/other fat 2TBSP
AP Flour 2TBSP
Mustard, powdered, Coleman's 1 TBSP (or to taste)
Pepper to taste
Salt/rub/seasoning to taste
Milk, warmed 2 cups
Cheddar, sharp, shredded 4 cups
Bread crumbs/panko enough to cover the surface- Preheat oven to 375°F
- Boil and drain the pasta. I like ridged elbows because they hold the sauce well.
- Heat up the fat of choice. Add the flour and make a roux. Whisk it well in the pan to keep it smooth. Its done when the color is dark blonde, and smells kinda nutty.
- Add the warmed milk, and keep whisking.
- Turn the heat off and add 2 cups of the cheese and keep stirring or whisking until smoot
- Add the drained pasta and mix well, so the sauce gets into the pasta.
- Pour it all into a casserole or baking dish of appropriate size.
- Top with the remaining 2 cups of cheddar, then top with an even layer of bread crumbs or panko.
- Bake for 30 mins.
- Broil on high for 1-2 mins until the top is browned to your liking.
Notes :
-Gouda, romano, parmesan can also be added to the cheese mix.
- I don't add salt because we are usually low salt folks, and the cheddar has plenty. You can add a teaspoon or two or whatever rub you like. I used to add some Old Bay seasoning occasionally.
-If you want a more creamy mac (stove-top version), add 3-4 cups of warm milk when making the sauce, and add all of the cheese ( or however much is needed to make the sauce the right consistency for you). Skip the bread crumbs and baking.
Re: sourdough bread, I'll point you to @lkapigian 's recent thread for some good pointers. There is also the Wild Yeast thread (which is great to read!) as well as the starter maintenance thread.

At this exact moment I am sitting at a small cafe here in Paris France enjoying watching the crowds near the Eiffel Tower. No BS here...The waiter just looked over my shoulder ...And proclaimed as he saw your pictures ...some French phrase that I suspect meant WOW.... ! maybe it was holy crap I ain't sure....
