26lb Suckling pig on BGE XL for Super Bowl
Here is my 6th cook on my BGE XL that I acquired about 2 weeks ago used from a neighbor. 24 hour brine in salt / brown sugar mix.

Heavy application of 4 1/2 cups of salt per Adam Perry Lang recipe 1 hour prior to starting cook.

Wanted to put pig in roaster but would not fit, used a full sheet roasting pan from butcher as drip tray and as roasting pan for the cook.

@saigodog - That is jumping right into the deep, deep end of the pool. Great looking outcome right there. Explaining the whole hog to the kids must have been a bit of a challenge.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

i would not do this with a big this size but a 25 pounder.... this was before they made xl's

GooDawgs - It was only $125 for the pig. It barley fit, originally had it in a roaster but it was too tall, had to take it out to stretch the pig out a little and put the rack in a larger pan.

My kids are 6 and 8. I thought they would be traumatized and become instant vegetarians so my wife and I put the pig in the cooler to take to the party so they would not see it. But I must have raised her right because when we were breaking down the pig in the kitchen she walked up, looked right at the pig and went to go play!
