Mediterranean-ish Pork Chops

Stopped by Wegman's today to pickup some pork butts and ribs for this week and next weekend. Also grabbed a pack of chops for dinner tonight.
Just after I put them on the Small raised direct around 300*, the sky opened up and dumped some much needed rain. Ran out and set the rain cap on top:
Used an umbrella when I went out to flip and rearrange them:
While they were roasting, I made a sauce based on http://www.food.com/recipe/mediterranean-pork-chops-243405 minus the capers. Only reason, I didn't have capers.
Pulled them between 140*-148*, the thinner one got hotter.
Sliced and served with the sauce and a nice Mediterranean salad my wife made.
Really nice meal. Great combo of rub and sauce. The sauce is more of a chutney consistency.
Oh, and the lighting in my kitchen sucks...

As incredible as that looks and with your great photography skills, I sure wouldn't sweat the kitchen lighting. capers are overrated!Sarasota Fl. and Lake Toxaway N.C. (and Novembers on the island of Kauai) (and April in France.... Don't hate on me for that)
