Olive Smoked Chickens w/ Blues Hog Tennessee Red

Had two chickens to smoke up tonight. Halved them, smoked them with olive wood and finished with Blues Hog Tennessee Red. The sauce is fantastic and is our new favorite for chicken. It can be found at World Market. The Blues Hog Original is too sweet on its own IMHO, but the Tennessee Red is spot on.

Damn fine looking chicken. Try mixing the Original sauce and the Red sauce 50/50 and see what you think my friend.

Looks great man. I haven't tried the red but I will be on the lookout. I tried the blues hog original and I treated it as BBQ sauce concentrate and mixed it with apple cider vinegar or a vinegar based sauce.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

Thx fellas! @YukonRon , it is an awesome wood to smoke with. It adds a nice kiss of sweet smoke that isn't overpowering at all. It's my go-to for chicken these days. My wife isn't big on smoked chicken usually, but she liked the olive smoke a lot too. I highly recommend it.

Thx @Foghorn ! @fishlessman , I used Caribeque Honey Heat . A little sweet and a little heat. Complimented the sauce and smoke nicely.

I agree with you on the sauce. The original is almost like a BBQ sauce jelly. We love the Red though. Chicken looks great!

Looks amazing as usual @Dyal_SC. What cook temp did you smoke the chicken? I've been doing whole birds at 225-250 with apricot wood lately and really like the taste and texture. @minniemoh , I smoked these at around a 350 dome temp until the breasts registered 160. Just over an hour probably. I gotta try apricot wood sometime myself! -
