Scene : a "rustic" farm, near Bastrop , TX. 

Actors: A massive Mangalitsa hog, dispatched to the big pig pen in the sky on 6.30.16, @20stone, @Foghorn, his son, @pigfisher, @The Cen-Tex Smoker, and myself. 

(Very) supporting roles : our wonderful wives. 

Folks rolled in to the farm on Friday and things got rolling.  20stone and pigfisher picked up the lead actor in Mafia style from the butcher on Friday - in an unplugged refrigerator loaded into the back of John's truck. 
This is what greeted us at the farm:

    That's what greeted you at the farm when you arrived in a leisurely fashion. I arrived in a more timely manner and was greeted by an opportunity to move those hunks of pig from a truck to the cooler. Keep in mind that my son is 5'11".

    @bud812, there may have been some very good beer consumed - including one of the few remaining bottles of St. Bernardus ABT OAK AGED ABT 12 on the planet (as near as I can tell).

    And some Allagash Curieux. And some good beer from Texas. And a Bells Oberon courtesy of my exchange elf @nlovold (great beer - THANK YOU).

    Steaks were fabulous. First round turned out perfect. First slowly brought up to temp on Foghorns travelling trash can cooker (he will elaborate on details). Then reverse seared on 20stone's MM.


    Then i farked up the second round of steaks. I blame that squarely on foghorns stash of EXCELLENT brews.

    BTW @nlovold - we declined to partake of the Bell's Oberon, as we let him know how hard it was to get a hold of outside of the Midwest. You're a good elf, man!

    I had insisted on sides, so the steaks were served with beer, cilantro rice, beer, poblano skillet potatoes, beer, @20stonespice's marvelous Cuban slaw, beer, and creamed mushrooms. And more beer.

    I'm thinking one of the sides had something to do with the 2nd batch of steaks getting farked up.

    We then spent the rest of the evening and night drinking under a huge oak tree with a much appreciated gentle breeze blowing. The amorous advances of a lonely donkey towards @The Cen-Tex Smoker notwithstanding.

    @pigfisher claims it was just "relaxed" whenever it saw Cen-Tex. So relaxed that its donkey schlong was banging around its ankles the rest of the night.

    The traveling trash can is a British ProQ Excel 20.  They are now sold in the US under the name Napoleon. But I love my egg. 

    And caliking was probably too drunk to remember the fireworks show that was provided by my son and Centex. They only blew up one mortar tube and no humans nor animals were injured so it was a success. 

    And somewhere along the way 20stone baked some bread.

    I drank beer and supervised. Pretty much like the rest of the weekend.

    Pics out of order of course. This is is Cali grubbing down on a duck egg breakfast taco with homemade Berkie bacon and skillet fried
    potatoes and shrooms. These were incredible and we made it all up on the spot. 

    Cali getting elbow deep in pig parts above. I have some more pics to come. Still recovering. Supervising can be hard work.

    Disclaimer: I may have been too drunk to remember the fireworks show where Cen-Tex tried to blow up the donkey. Luckily, someone (foghorn's son) was sober enough to save the day (and us).

    That oak aged St. Bernardus was insanely good. Might be the best beer I've ever had. I'm a sucker for Abbey Ales but this was special. And here I was feeling all proud of myself for deferring the Oberon to you...

    i do do love me some Oberon though.

    And you are only seeing "pigfister" when your browser auto corrects to that because of your search history. You are a sick bastard.

    Because the breakfast tacos weren't enough we also had apple cinnamon crescent rolls - you know - for breakfast dessert.

    The tacos sound killer. Can't wait to use my MM while camping. The next thing I want is a 85gal traveling trash can cooker.

    @texaswig, don't you be dissin my trash can cooker. It's defintely harder to control than an egg. But a portable (latches together and can be carried in one hand) grill that provides two 20" cooking surfaces for direct or indirect cooking is nothing to sneeze at. 

    It puts out some excellent food. I won't say that everything I cooked on it was perfect, but I will point out that it took caliking and a minimax to overcook some steaks.
