I just love beef ribs. Yours look outstanding my friend. Eat well.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"

Those look great!  I have another slab of baby backs on but really need to try beef next if I can find some good plate ribs.  Forgot to check last time at RD.

Where does everyone get such meaty beef ribs?  Kroger has nice short ribs, but the beef racks are mostly shiners with little meat.

Beef ribs (brisket on a stick), served with bhindi boondi (ocra), Cuban slaw, pickled onions, pickled cuke with Thai chili (courtesy of  @caliking ), and sourdough rye bread (first attempt, still work to be done).  Sloppy plating since everyone was waiting for me.

It was nice to cook on the LBGE again.  We've been giving the MM a workout, but it's nice to have room.

Our local grocer always cuts up the ribs - you have to ask to get them whole.

Good looking plate. I'd even hit the bhindi (I usually hate bhindi).
