    Well...here they are. I have never seen such big briskets in my life. One is at least 33lb. His digital scale shut off at 33. The other is 28. I was going to ship them in a snake river box that I kept for a case such as this. This box had 2 SRF briskets and 20lb of ground beef in it. The big brisket would not fit. The "little" one fit perfectly. 

    check out the the marbling in the FLAT. Looks like a freaking ribeye. I think I'm just going to have to ship it in my large cooler and get it back from Scottie somewhere down the road. I can't think of anything else to ship it in

    enough chit chat. Here are the pics.

    This is going to 2 guys  with plenty of firepower to cook them. I'm not worthy. I swear if you cut the big one in half it wouldn't fit on a large BGE

    They are tough to find but they are at several farmer's markets during the week. They do Bee Cave Sunday mornings, The Triangle on Wednesdays from 3-7, Lago Vista Fridays 2:30-6:30 and the big one downtown Austin on Saturdays. You can call ahead and they will bring you whatever they have. They do sell most of their glory cuts to the Driskill Hotel but they do have some from time to time. 

    Just shoot him an email or message him on facebook and he will get right back to you. Very nice and humble guy. His name is Josh.

    All I have to say is "Son of a ****".  Better to be lucky than good any day.  Damn.  I would definitely need to acquire more friends for that banquet (and larger cookers),  @TheCen_Tex_Smoker  man, talk about going above and beyond-you are there.  Most eggcellent.  
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    My big smoker was dropped off Saturday for a month getting a double axle put on.. I get her back father's day and this will be it's welcome home cook. I don't think it would even fit on the XL

    wait until you see it. I asked my neighbor if he knew what it was and he had no idea. It looks like the whole rib section of a cow. never seen anything like this. And that marbling in the flat...wow

    how are you going to cook this on your wore out and broken down webber kettle? Just push the kingsford off to one side and go indirect? Make sure all the lighter fluid is burned off before you start to cook.

    I have honestly been debating that very thing. It's going on one of the big units for sure. I think I will run a 3 way mix of oak, pecan and cherry. I have grown very fond of that mixture.

    Tex, the next time that you speak to him, ask him if he will sale a whole unseperated Wagyu clod. See if he will give you a price on a 30-40 pounder.

  • Ok. He will for sure. He's slaughtering the brother of yours in the next few weeks. I'm sure you could have them both if you wanted. He sells everything from tip to tail and needs help with the big cuts.
