Brisket - rainy day cook

I picked up a prime brisket at HEB last week, and decided to take advantage of the rainy day to cook it. Put it on at 7:00a at about 275 dome; pulled at 3p when it was 205 IT and and it was as good as it was going to get. Wrapped in paper and PTC for two hours. 

I was worried during the cook, it took a lot longer than other primes have for me, and the flat didn't seem very tender, but it turned out fairly moist and tender. 

No guests today, so hoping to finally have leftovers to try the Salado brisket chili recipe.
