Brand new EggHead intro

Hi Eggies!

Just joined the forum as I became an Egghead myself today, so starting off with an introduction.

My name is Ron and I'm from The Netherlands. Last week the wife and I ordered a BGE Medium after thinking and discussing it for a long time.

We got married June 2014 and hired a cook for our wedding reception who used the BGE. In NL Kamado's are not that common (yet?) so this was the first time I saw one. I was blown away by the possibilities and the taste and quality of the food he prepared. So we decided to buy a Kamado since we're spending a lot of time in our kitchen making pizza, baking bread, pulled pork, chicken roasts, smoking fish etc etc. It seems like a Kamado is a perfect buy for us and we'll use a lot of the BGE's aspects.

Can't wait to start using it...

I've been lurking on this forum for a while already and I'm sure I'm going to spend some time on here from now on  :)

Hey Ron, welcome!  You're going to love this thing.

Yeah, the versatility of the egg is amazing.  I have as much fun doing daily family meal cooks as I do on weekend low and slows.

It's not without a bit of frustrations but you'll find the successes vastly outweigh the blackened pizzas and dry brisket.  More often than not you are going to be amazed with the results and quality.  It's a lot of fun.

    Congrats and again, welcome!

Thanks for the warm welcome! B)

Of course I'll show some of our cooks here :)

First up bread, beer can chicken and veggie skewers tomorrow.

I don't have a nest yet, as we're transforming an Ikea table into a nice egg home.

@Hotch: I live in Limburg, allll the way in the South haha, about 1.5 hrs drive from Blaricum. So not close in Dutch terms haha.

    @Skiddymarker: Will do!

I can't wait to see your transformed ikea table. Please make sure to get the table nest, it worth every penny, just look around at some of the table fires.  Also remember to burp your egg.....I'm still waiting on my arm hair to grow back.  Best of luck on your first cook....I'm excited to see some photos.

of course here is my welcome. You're going to learn a lot here.  For example, I thought I was a seasoned vet until last month when everyone was talking about beer can burgers. What the hell is that??  You'll learn.

Not only that, If you hang around you'll make friends, maybe even meet up with some of the members.

welcome....and remember post your iPhone pics in landscape mode! Don't be a side ways poster!!!

    Thanks for the tips!

Luckily I'm a good burper :p  I can imagine I'll forget it once or twice, but I guess you have to learn the hard way hahaha.

The guy in the store recommended us to use a few tiles under the egg. Is this tricky business? If so, I thing I'll order the table nest after all.

This is the table we're going to use:

My dad is quite the carpenter, so it will be sturdy enough when he's done with it :D
We'll also use really good stuff to impregnate the wood.

@MaC122: thanks. I already watched a lot of youtube clips and read a lot of Kamado things, so beer can burgers are already on my todo list  :)

Edit: trying to figure out how to embed pics from Flickr instead of uploading them here...
    Edit edit: found it   :)

Table nest is ideal, better than tiles, air gap is your friend. Some tables have charred right thru the tile/patio stone.
Beer can chicken is not the best in an egg, it is still good, just do not need the beer can. The egg's resticted airflow maintains the moisture so well, you do not need a water pan or a beer can. Suggest trying a spatchcock chicken - stellar results.

Welcome aboard and enjoy the journey.  Another vote for the air gap as your friend.

@Foghorn: front row? Really?? This game was once in a lifetime being Dutch. I screamed my lungs out when RvP scored this one :)

I'll try the beer can chicken once since I'm a big beer fanatic. Next time I'll just butterfly the bird and use a nice rub.

Thx for the replies. I guess I'll be ordering the table nest soon  :)

Yes.  We got tickets in the first round of the FIFA lottery - which was before the draw so we didn't know which teams would be playing.  When the draw was held we felt like we won the lottery.  Then when we arrived in Brazil we went to a ticket center to get our tickets and find out where we were sitting we felt like we won the lottery again.  On our way to the match we stumbled on a sea of orange Dutch fans in the town square that were dancing and drinking local beers so we joined them.  It was a good day and a great match.

We also saw Germany vs Portugal and Switzerland vs France.  And went to the Amazon for 3 nights and spent 3 nights at a beach resort.  It was a great family trip.

We are toying with the idea of going to France next year for the Euros. I'd love to see the Oranje again.

@Ronster76 the table nest is your best bet to  prevent Heat transfer to the wood, like @Skiddymarker said.  The dealers in my area suggest  putting the nest on some tile to also protect the wood from stray  embers that may escape from the draft door.
