    would it be best to put probe in during rest instead of probing during sear at 700.

      Probably. I usually check the meat temp right before I put them on for the sear. If I have done it right, it will be 8-10 degrees below my target temp, then I sear for 1 min per side and just pull them off without checking the temp again. To check the temp during a sear you often need a glove on.
