I have a need to use ground meat for someone's dietary requirement.
I was wanting to serve chicken thighs.
I'm thinking of deboning and removing the skin from some thighs.
Grind up the meat, then make a meatball and wrap it with the chicken thigh skin and hold it closed with thin metal skewers.
i.e. make boneless, but not skinless ground chicken thighs.
What do ya'll think?

Do it! You can smoke them in a muffin tin until they firm up then pull them to crispy up. I love this idea, you can mix all kinds of flavor into them.THANK YOU FOR YOUR ATTENTION TO THIS MATTER

Sounds like a great idea. I would scrape the fat off the skin. It can be messy and time consuming but will help produce crispy skin.They/Them

Son often does this with boneless thighs, it is time consuming, the results are stellar. Don’t see why wrapping the skin around ground chicken would not work well. It sounds good to me. I am curious though- someone has dietary requirements that they can only eat ground meat?? Or- you want to make meatballs and they don't eat red meat or pork?Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

We have a lot of patients that can't handle any meat that isn't ground up. It could be anything from chewing difficulty to esophageal or intestinal strictures that prevent passage of anything but finely chopped foods.SmokeyPitt said:It sounds good to me.
