Thanks folks. I was pretty sure I would frick up these beautiful steaks. I didn't do anything fancy. Just plowboys bovine bold then threw em on my little weber sear grate sitiing on regular grid. Cooked em at 500 degrees til they hit about 125. Pulled erins off first as it was a little thinner. She wolfed it down real fast before heading at the doir to work overnight shift. I left mine on little longer. It came out perfect. I ate it really slow without any other food orvdrink. Just wanted to savor every bite. Damn near licked the plate clean.

Now this is my kind of meal. Meat, cheese and more meat. What can I say brother other than perfection personified. Outstanding job. Any chance that you can box some of it up and ship it to Crowley Barge 455-6 at the Port of Pascagoula? I would be most grateful!!

Yes I will certainly be cooking more SRF products in the near future. Great way to spoil the lovely wife and its still cheaper and better than eating out.

I just went back to the snake river farms website. They didn't have the 8oz ribeye filets anymore but they have a 24oz flatiron. Anybody had any experience with that cut from SRF?

I haven't had the SRF flat irons. That said I'm a huge fan of flat iron. A lot of times when I buy a clod, instead of cooking it whole I will separate it into the 3 individual heads and cut some flat irons out of it. Just judging by the quality of everything else I have had from SRF'S, I would speculate that their flat irons are top tier as well.Biggreenpharmacist said:I just went back to the snake river farms website. I had the caps from your filets in Vegas this week. Seems that SRF rib cap steaks are all the rage at the fancy shops in Vegas these days. They are out if this world. Guess this is why you cannot buy a while ribeye from SRF.

Well I hope your caps were as good as my filets.

It was really great. I've been doing low carb and I dont like green veggies so I'm basically a carnivore. Those steaks were beautiful. I was kinda let down when I first got them with how small they are but they more than made up for their size with taste. Thought my wife was gonna jab me with her fork cuz every time she took a bite I was taking pics.

Yours looked awesome and mine were among the best I've ever had as well. Michael Mina and Wolfgang hoard the caps and they are really special. I eat at strip steak (Mina) or Cut (puck) almost every time I'm in Vegas and get the rib cap steak every time I eat at either place. It never disappoints. Glad to hear the filets appear to be top notch as well. Need to grab some if those next time they run the deal.Biggreenpharmacist said:Well I hope your caps were as good as my filets.Keepin' It Weird in The ATX FBTX -
I was really scared I was gonna screw them up. Couldnt decide how to cook them. Finally decided nothing fancy, no tricks, just went direct about 500. Seemed to work beautifully.
