Personally I'd take it off. Wrap in foil good and tight. Put it in pre warmed cooler with a towel. It's still gonna cook for a bit. It will still be hot in 3 hoursLBGE& SBGE———————————————•———————– Pennsylvania / poconos

I have found a 16.81 pound prime brisket at Sam's Club before at $3.87 a pound. I didn't realize it tell I got home. I was just looking for the biggest one they had. That was a nice score.XL, WSM, Coleman Road Trip Gas GrillKansas City, Mo. -

I have never cooked a brisket before, but I am going to soon. We have a new butcher shop that just opened over the summer. I just checked with them and a whole choice brisket is $5.49 per pound.My local chain grocery store has flats for $9.98 per pound! The $5.49 per pound sounds expensive to me, but I don't have a choice living in the sticks.

For those of you near a Costco-check it out for prime brisket on a periodic basis. The local store gets them in (more frequently this year than in the past) and last week they were running $3.99/lb. Can't beat that with a stick-BTW the local Kroger has had choice flats for $5.99/lb for the entire year. FWIW-Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
