@laurelbeard my Uncle has one of those half moon cast iron skillets. He does bacon and eggs and hashbrowns on it all the time. I'm not much of a morning person so I never wake up in time to cook breakfast on the egg.1 large BGE, Spartanburg SC

I also have one of the half cast iron griddles and cook eggs,bacon,sausages,ham,toaste and potatoes etc.I cook Cinnamon rolls on the egg too.

Anything you do inside can be done on the egg.
Another option is incorporating egged food into standard items(pulled pork in an omelet). -
I've done eggs Benedict on the egg. Easy and really tasty. Smokey Hollandaise sauce

I know it is not breakfast, but this has become a favourite around our house. The pork sirloin tip roasts are from Costco and there is four in a package. SWMBO pulled this from the inter webs - she can't recall where. Braised roast - not much smoke, nice change.
1 - 1.5 Kg pork loin roast
15 ml minced garlic, separated
Salt and freshly ground pepper
10 ml dried rosemary
5 ml dried thyme leaves
250 ml diced onion
2 medium carrots, diced
1 stalk celery, diced
30 ml olive oil, separated
200 ml beef or chicken broth, separated
1. Preheat oven/smoker to 225 F.
2. Rub pork with half of the garlic. Combine the rosemary and thyme in a small bowl and crumble together with your fingers. Sprinkle herb mixture onto all sides of the pork. Season with salt and fresh ground black pepper. Pat meat to gently rub everything in.
3. Heat half oil in a 9"-10" cast iron (or oven-proof) skillet over medium-high heat. Brown roast on all sides then remove to a plate and set aside.
4. Add remaining oil and sauté onions, carrot, and celery stirring occasionally, until vegetables begin to brown. Add remaining garlic and cook a minute longer. Deglaze skillet with half of broth.
5. Place roast on top of vegetable/broth mixture and place skillet in center of oven. Cook until an instant read thermometer's internal temperature reaches 145 F (about 2 hours).
6. Remove roast from skillet and tent with foil. Allow to rest for 10 minutes before slicing and serving with pan juices. Use remainder of broth and thicken as needed to make pan juices.

Try this:In a cast iron skillet, spray some Pam on the bottom and sides, then line the skillet with Pillsbury crescent dough.Put some cooked sausage on top of the dough, cooked bacon, whatever you got.Whip up a few eggs with some milk, pour that on top.If you have some of those hash brown 'taters, layer those on top, and then some shredded cheese.Salt and pepper the top, indirect Egg at 375f. for a half hour, until you see the eggs are set and the crescent dough is browning.Adjust for kids, whatever they like, or for adults you can add mushrooms, peppers, whatever.Slice it like a pizza and enjoy.

Try some french toast with a little Bailey's Irish Cream mixed in with the eggs. Grill on cast iron. Or bacon right on the grate direct.

Another simple cook is a breakfast skillet. This is basically the same method is starting on the stove then finishing in the oven. Set up the egg for direct cooking. In a cast iron skillet brown some sausage and remove, leaving the grease. Cook potatoes and onions in the sausage grease. When the potatoes are almost done, remove the skillet and add some beaten eggs to the skillet. Set the plate setter legs down on the grid, then put the skillet on top of the setter. If you have some kind of spacer to put under the skillet that is good...but I have put it right on the cold setter and it turned out fine.Close the egg and get it about 350 and cook until eggs are set, then add some cheese and melt it.I have to admit I think I just used the frozen shredded taters in that cook. Fresh are better, but the frozen were buy one get one free .Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

@laurelbeard I use a regular cast iron skillet and cook my eggs, sausages, etc in that on the Egg. When I cook bacon or potatoes I usually cool them on my CI grate.Cooking on a XL BGE from Allendale, Mi.
