Boston Butt

edited November -1 in EggHead Forum
It takes me approximately 20 hours, at 250 degrees, to cook a 10 lb. butt. How long would I expect to cook 2, 5 lb. butts? (Internal temp. 200 degrees)

    PLD,
It will take about the same amount of time for a couple of reasons. First you want it to take that long to break down all of the collagen. Second tens pounds of meat take that long to cook, whether or not it is in one chunk or two. [p]The only thing to watch our for is that one may finish before the other, so always check the temp of both butts while cooking.[p]Hope this Helps,

  • PLD,
I would start checking for internal temp in 10 to 12 hours and I would expect them done in 12 to 14 hours, the factor that could cause a longer cook would be your set may cause the cooking level to be lower than 250º at the dome.
