moose sausage & fatty with bomba!

well here are a few cooked direct. got to say they were good but way too cooked. i pulled them at 200.had kinda forgot about them.
but then i thought i would try a moose fatty. so i took some moose/pork and bomba sausages removed the casings and made a large fatty and then heavily dusted with raging river.i cooked at 250 with lots of cherry in the fire. i pulled it at 160. good but still way too cooked,i was planning to pull at 140 but then hesitated! i should know by now that you always trust your first call. oh well never the less it was very good. in a few days i will re do it and truly pull at 140. here are some pics.

Thank goodness those meese are big! I like your enthusiasm, and your "no surrender" attitude. Keep in mind Mike that if you pull it at 145F and foil it, and then put it in a cooler to rest, it'll be around 160F. I think you are safe, but I'm no moose expert by any means.

actually looking for a final temp of 150 maximum!as far as taste i have that , but trying to improve the overall
tenderness and juicyness. -

Try adding something that will impart liquid; apple,onion, or even milk soaked bread. It looks like the bomba cooks to the outside causing the center to be on the dry side. But even still, they look AWESOME!!! Does the taste reflect the labomba flavor?

nope just the same sausages!
but i hit the big one this morning i have a friend that has lots of ground moose and he is letting me have it.
so next batch all moose no pork and maybe this time and bacon fat and some bacon chunks??? -
lol
got to get this right for the fest and then i need to get it down there to fidels!! -
