One trick that I have used is to pour dark rum over a grilled and just finished steak or chop and ignite it. The alcohol burns away leaving a rum flavor to mix with the seasonings on the grilled piece of meat; very tasty. Let us know what you do and how it comes out.

BettyC, one of my favorites is just pepper and cognac. You can get fancy and use cracked peppercorns if you want but just a little cognac with fresh ground pepper can produce a great taste. Other people will do the same thing with a good bourbon.

I have sprayed crown royal onto steaks as they cook.[p]Nothing short of AWESOME!! Just be careful about flareups.[p]These steaks soaked in a mesquite marinade w/black pepper, garlic salt, and worchistershire (sp?) sauce for an hour prior to grilling.[p]Good stuff.

BettyC, Yes!!! I pour about 2 - 3 oz of a good single malt scotch -....... I then add a splash of soda to it and two ice cubes........somehow the meat always tastes better. Lots of luck.

You all have a flair for the dramatic. I can just see me burning down the house igniting my meat. However, it would be an interesting presentation. [p]Would spraying alcohol on meat make a lean meat stay tender?[p]I have done some reading on the net about alcohol marinades . . . some add sugar to bourbon OR make a dressing like mix with booze using oils and herbs. [p]Seems you all go more the straight booze route . . . wouldn't the oils or sugar tone down the alcohol taste? I am trying to make a lean meat more tender but not loose the flavor of the meat. [p]Which is the best route? Straight booze or booze mixed?[p]Thanks for the "secret recipes" website . . . that was cool.[p]

Yup, the secrets website is kind of cool. As far as your question about the alcohol taste in the meat goes, I have never noticed it. The alcohol will burn off during the cooking process, so that shouldn't be a concern.[p]I know that I have had everything from whiskey steaks, bourbon salmon, to tequila and lime chicken (not to mention all of the beer marinades out there) that all tasted incredible but never an alcohol taste. I would recommend that you try just a little of your favorite beverage and experiment a little. The worst that can happen is that you ruin a piece of meat but at least you would still have the rest of the bottle to consume to make yourself feel better about it![p]Matt.

So far I have tried bourbon mixed with oil and spices . . . great combo. Also, I tried beer with oil and spices. I think I liked beer even better. [p]I probably need to tone down the booze a little since I use dry aged grass fed steak which is extremely lean and the green egg cooks extremely fast. The booze doesn't have a chance to cook off.[p]My steak cooks in 1 1/2 minutes each side to sear and 1 minute at low. [p]
