I set up a repeating timer for 25 minutes. Over the years I’ve found that works quite well.kl8ton said:

The KBQ cooks large hunks of protein faster than any other device I’ve seen. It’s surely due to the design and how it circulates the smoke. It’s very unusual that I need much more than seven hours for a standard-sized brisket (typically 14 lbs or so). Thanks for the info as I figured every 25 minutes for a double digit hour cook is a pain.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
