    Did it not cool because of the mass of the chili?  I cooked a big ole pot of chili one time and put the pot in the fridge to cool overnight but when I woke up it was still like 50 degrees.

    I have solved this issue by sticking in two large metal serving spoons into the center and leaving the lid off.  Metal works like a heat exchanger and cools it much faster.

    That was my initial thought. One of the pots of chili was in a big stainless bowl and I knew I was in trouble when the bowl wasn't cold to the touch when moving it out from the fridge. I did the old trusty let's touch a beer can test in the fridge to double check. The beer wasn't very cold either. So 10+ lbs of chili hit the trash.

    Freeze bottles of water for stocks and things like this , toss the bottles when done

    Damn, sorry to see that over the top over the top chilli getting wasted. 

    Here's how we routinely cool down giant pots ot soup and curry, etc. Keep in mind air is a poor conductor of heat. Cold and icy water work best for us... We start by submerging the metal pot in a big hotel pan filled with cold water, then stir the contents occasionally to distribute the heat, after changing the water couple of times we add ice cubes to fresh cold water for the final stretch. With this approach we can chill down to below room temp real quick depending on the quantity. 

    Got to love winter here, the enclosed front porch turns into a walk in fridge!

    Or be like 95% of the population who says “in fridge, it’s safe!” Most people don’t worry/think about food safety.  That is why I do not eat at potlucks until I have had 3 or 4 beverages.

    Unless I missed it how was the ladies' chili? Did you taste it? Was it all scarfed down by the visitors and church members?

    For what it's worth, I would have risked it and eaten the you know what out of that chili. But good on you for not taking any chances with others.

    I’ve been hospitalized for salmonella. You don’t want any part of that. I’ve had kidney stones and would take them again all day every day over salmonella.

    Fortunately she brought two roasters of chili and we had enough for the congregation and visitors. (With other food) The chili was good. Especially given the circumstances on my end. It was a million times better than the chili I didn't show up with.

    For what it's worth, I would have risked it and eaten the you know what out of that chili. But good on you for not taking any chances with others.

    My Dad was over the night before while I was working on the chili. He called me the next day and said, "You did what to the chili?" He was pissed that I threw it away. He said, " I would have ate the biggest bowl of chili that I could have possibly ate before you threw it away." I always bust his balls when he leaves meat on the counter to thaw for hours. 

    Yeah, $100+ worth of chili is relatively cheap compared to a bunch of medical bills. It still stings but simply not worth the risk with others involved.

    We used to leave frozen meat on the counter, the night before or in the morning, before heading out to work, then cooked them for dinner. Also, growing up in India most folks  didn't even have a fridge in the house.

    i almost want to think a tolerance builds up, we ate from a turkey carcass left out for days and then made soup. nowadays it sits outside after tday where its colder than the basement. with chili i wouldnt even think about leaving it on the stove other than i would not serve it outside the family

    ive had food poisoning before, a restaurant, chicken parm i think, and a friends mother giving us hotdogs for camping. makes me wonder what they did

    I agree and also why there are so many “ food allergies “ nowadays, sterile environment people are raised in today , anti bacterial everything killed our immune systems…

    The whole time growing up my parents would lay whatever frozen meat we were having for dinner in the sink before leaving for work. I once worked with a guy that would pack his lunch for work and then put whatever frozen meat they were planning to have for dinner in his lunch box. He said he was killing two birds with one stone. The frozen meat would keep his lunch cool plus it’d thaw before dinner.

    No official chilli recipe. I really like the MN Ass Blaster chili recipe here on the forum as a base. (That obviously doesn't work for a potluck for a church but you can tweak the recipe on what you're looking for.
