I call myself a "vegegrilltarian". Been vegetarian for over 3 or 4 decades and dove into egging about a year back with a vengance. I have a list of over 23 items I've done on the egg, some successes, some failures, but all worth the experience. Looking at starting to explore a few new things this summer including waffles, pancakes and soups. maybe even a veggie chili with cornbread.

@zaphod welcome aboard, looking forward to some veggie ideas. Been playing around with a brussel sprout recipe I grabbed off the Hastybake website and it has become a fave around here.
@ikapigian never met an eggplant I did not like.
