  • I love this thread. The wife being away is indeed a great excuse for 8lbs of beef ribs and a personal, albeit full-size, cheesecake. Hope you will pair it appropriately assorted suds, fermented fruits and/or spirits.

    Epilogue 

    I really love smoking beef ribs. Other than the expense, they are a simple cook that most eggers can pull off easily.

    Easy to prep, forgiving to smoke. Just get that "butta" feel. 

    However, full confession...I can't eat much of these things these days. They are sooooo rich!

    And, I have a cheesecake to eat.

    Also, it's so fun to post a cook in the morning and have a few Egg brothers
    following along! Thanks for the comments, etc.

    With that in mind, remember, there are many posters that don't get much attention sometimes.  

    I admit, I don't spend enough time on the main page. So, I need to do better showing encouragement to other posters.

    Lots of good cooks on this site.

    Let's show them some love!

    But Da-n son and all the other descriptors for those ribs are spot-on.  Nailed 'em.  Yes, you are right regarding the richness and the easy transition to meat coma.

    Can someone tell me specifically, what kind of beef rib is in the original post; the technical name of the cut besides dino ribs? 

    I did my first beef ribs yesterday. Only took two hours at 270ish. They were tasty, but not much meat on them. I thought I was getting a cut of something along the lines of what is in the original post. Was tough to tell by the packaging.
