I always did evoo, Worcestershire, garlic. Grill it hot and fast. Pull at 120 and let it rest 10-15 minutes

I have always used dry rub because I would think any marinade would burn at the high heat sear. Am I wrong?

So many variations on this marinade.  All turn out great.  I butchered 8-10 deer every year I bow hunted, and we marinated the back straps and grilled them the next day at the archery club.  Always a favorite treat for the bowhunters!
We used a lot of the deer meat in chili and stews at the monthly 3D archery tournament lunches. And a lot of antelope chili. Lots of good eats at those tournaments! Fun times for sure.

That's why I said salt only.  The teriyaki guys up here bring it to 160 plus as well. Medium rare with a backstrap, I don't cook much higher with black bear and I'm still alive, and it's just salt

It’s right up there with peanuts in a turd.
