Eaker Barbecue in Fredericksburg Texas. Legit central TX BBQ
1 lb brisket 50/50 (lean and fatty)
1/2 lb jalapeño cheddar sausage (made from brisket trimmings)
1/2 lb pulled pork
1/2 lb turkey
Fatty point sandwich on white bread with pickled onions,
pickled jalapeño, pickled onions, and kimchi cucumbers with a little sauce.

1/2 lb pulled pork
1/2 lb turkey
Sides:
mac n cheese
kimchi fried rice
potato salad
kimchi pickles

I am liking all the pickled toppings on that sandwich.
On my next sammie build I might have to go in that direction. I have worn out regular cole slaw, broccoli slaw etc and recently been topping with salsa criolla, but I am about due for a change.

Hye is cool. Some great wineries, garrison Bros. Bourbon distillery, hye cider, and some other cool stuff nearby. It’s all part of the Texas Wine Trail out here by where we live. Cooked up some homemade brats today and braised the onions in the hop cider we got yesterday. Son’s GF is GF (gluten free and has legit celiac so we have to be super careful). She always misses out on beer brats so I decided that the hop cider we bought yesterday (GF) would be a good alternative to beer. I figured pork and apple goes well together and we were not disappointed. We sweated the onions in butter and then braised them down in the hop cider. Way better than beer braised onions with the bonus (for us) of being Gluten Free. I’ll never make them any other way now.Didn’t get a pic of loaded brats but they were fantastic- homemade brats, cider braised onions, homemade kraut. We cracked a nice rosé that we picked up yesterday on the wine trail and drained the rest of hopped cider as well.Headed out to ramble around the ranch and see if we can’t scare up some critters.Keepin' It Weird in The ATX FBTX -

one of my really good friends recently sold his ranch in Harper that we’ve been going to for 20+ years. It’s amazing to see the growth Hye has gone through.
