Eaker Barbecue in Fredericksburg Texas. Legit central TX BBQ

1 lb brisket 50/50 (lean and fatty)
1/2 lb jalapeño cheddar sausage (made from brisket trimmings)
1/2 lb pulled pork
1/2 lb turkey   

Sides:

mac n cheese
kimchi fried rice
potato salad 
kimchi pickles 




Fatty point sandwich on white bread with pickled onions,
pickled  jalapeño, pickled onions, and kimchi cucumbers with a little sauce.

    I am liking all the pickled toppings on that sandwich. 
    On my next sammie build I might have to go in that direction. I have worn out regular cole slaw, broccoli slaw etc and recently been topping with salsa criolla, but I am about due for a change.

    Living well again today!

    Glad to hear good things about Eaker. They've been on my radar since earlier this year, but haven't quite made it out that side. Figured we'd roll it into a trip out to see y'all at some point.

    one of my really good friends recently sold his ranch in Harper that we’ve been going to for 20+ years.   It’s amazing to see the growth Hye has gone through.   So many small Texas towns are going after that Round Top, etc vibe, which is a good thing.

    Well if you are. “The people from Austin” with pink hair, tattoos on every bit of your skin, piercings in unmentionable places, I can see where Fredericksburg folk may give a second glance.   I’m guessing it’s not that extreme.  

    However I get it, being from The outskirts of Houston and having the bulk of my family living/have lived in the hill country for decades I have been called “city” a time or two.   Is what it is…
