Found a sexy prime picanha in the freezer.


Pounded some garlic with coarse salt and slathered it on. Direct, about 475ish.


Pao de quiejo from scratch, leeks, and mashed pumpkin for sides (I know... poorly plated).




And, a righteous cap to a great meal... Basque cheesecake. Lighter than the New York-style, and so damn delicious.

    Another killer creative meal, thanks for not burying it in WAYCTD. Bogdan approved! I’m sure Cap approves the money shot too. Love the engraving on the knife, only way to top that is engraving the skewers 😉 Cheesecake recipe?

    Thanks. The knife was a 40th b'day gift from caliqueen. She had it custom made, and the grip/handle was matched to my favorite $10 knife from Target =)

    Based on everything I read about what the taste and texture is supposed to be like, this recipe seemed to be the closest. I decreased the sugar to 300g, added vanilla extract 2tsp, and used a 9" springform pan.

    My daughter may have a basque cheesecake recipe, but I suspect that you are referring to my wife’s Puerto Rican cheese flan.  I’d put that sh*t up against anything.  It might not win - depending on the preference of the judges, but it will stand up to any competitors.  

    And that’s a great meal all the way around, as everyone else has said.  

    And of course, Caliking is right - he can cook circles around me on sides and desserts.
