I like the dexter scalloped slicer for ribs and briskets. All the bbq shops use them here. Here is a link to Amazon. You can definitely find one in the $30’s at a restaurant supply store. I'm also a Dexter fanboy. I use the 6" boning knife for ribs. It's my workhorse for trimming and cutting in the kitchen.

How do you sharpen the Dexters?
I bought the "Amazon Choice" and have been very happy with it. I just used it to carve Prime Rib last week and it performed well.

I have a Victorinox scalloped slicer I use for ribs and brisket. However the Dexter knives are really nice, I have a filet knife for my saltwater catches--- with that I prefer my Bubba knife a bit more.
I also have a Dexter oyster knife which is a champion.LBGE, 28” BS, Weber Kettle, HCI 7.8 SE Texas -

A prefer the dexter millennia series handles to victorinox. Both are excellent inexpensive knives. I really like the offset sandwich knife which is also scalloped. It’s often overlooked but has a million uses like cutting ribs.

my big knives i got from a great uncle, worked a butcher shop in the 1950's. carbon steel, super sharp lamsons. really no need to replace those. i like the dexter knives and have several but i really like the lamson knives with the added quality. not many use a big slicer often, i would go with ebay.

Another vote for the Dexter. When I visited Franklin's I was so impressed I bought one as a souvenir.
